Golden Honey Fall Sugar Cookies
A simple and nostalgic cookie recipe to fill your kitchen with the scent of the holidays! These cookies roll out beautifully and are perfect for little hands to cut, decorate, and enjoy. This recipe is tried and true but are very different from your typical sugar cookie in taste, and they are a bit healthier! If your kids enjoy graham cracker flavors and you enjoy sugar cookies that cut out easily and keep their shape this is the recipe for you! You can make this for any holiday cut out cookie, I like to use different flavor extracts, ex. Vanilla, almond, and lemon.
Ingredients:
½ cup shortening (I use butter)
¼ cup sugar
1 egg
¾ cup honey
1 teaspoon lemon flavoring (I used vanilla)
2¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
Cookie Directions:
1. In a large bowl, cream together the shortening, sugar, egg, honey, and extract flavoring until smooth.
2. In a separate bowl, whisk together the flour, baking soda, and salt.
3. Gradually add the dry ingredients to the wet mixture and blend well.
4. Chill dough for at least 1 hour.
5. Preheat oven to 375°F. Roll out dough on a lightly floured surface to about ¼ inch thick.
6. Use cookie cutters to create festive shapes.
7. Place cookies 1 inch apart on a lightly greased baking sheet.
8. Bake for 8–10 minutes, or until edges are lightly golden and no fingerprint remains when touched.
9. Let cool completely before decorating.
Buttercream frosting recipe:
½ cup unsalted butter, at room temperature
2 cups confectioners' sugar
1 ½ teaspoons pure vanilla extract
2 tablespoons milk
3 drops food coloring, or as needed (Optional)
Cream butter in the bowl of a stand mixer fitted with the paddle attachment until smooth and fluffy.
Gradually beat in confectioners' sugar until fully incorporated
Beat in vanilla, add milk and beat for an additional 3 to 4 minutes.
Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.
Use immediately and can be stored in airtight container at room temperature for 3 days.
